A Week in Pictures

I have an odd assortment right now of pictures so I thought I would throw them all into a random post of our week's events so far. Monday night we took the kids to Riverside park to play for a little while after dinner. We took the wagon with us and they loved being pulled around near the fountain by their daddy. He would get them just close enough to touch the water which Eli thought was so fun. :)
Hailey has become Miss Independent. She fusses at me if I try to help her walk. :)
Eli loves singing to this CD while standing on Hailey's toy box. He stomps his feet and claps his hands. He is such a joyful little boy.
Meal times can be a bit stressful for me as I usually get home from work around 5:15 and then quickly try to get dinner ready and on everyone's plates by 6. I actually come home over lunch on most days to do some prep work and get a head start for the meal. Eli and Hailey don't always like what we are having (which I am learning to be ok with) so it makes me so happy on nights when they clean their plates. Tonight, was a good night and the pictures show it.

Eli took a little coaxing, but as soon as I told him he would be big and strong like daddy if he ate his meat he started gobbling it up. :)

I love these pictures. They remind me of God's goodness to me even though life has felt a little crazy lately. The only explanation I have is that I got a brief, six week taste of being a stay-at-home mom over the summer and ever since I haven't been able to kick it back into full-time working mom gear. Whew! There are MANY with burdens that FAR outweigh mine, but I feel like God is reminding me during this time to still be joyful. To not be so exhausted mentally and physically that I am unable to spend quality time with Him and shine the goodness He has put in my life to those around me. He is also continually teaching me that I have way too much Martha in me and I need to be more like Mary... sitting at His feet (Luke 10:38). My "Martha"ness gives me a headache most days. :) Well, those are my thoughts tonight. Time to rest up for tomorrow!

Family Video

Well, I am finally getting around to posting some video of Eli and Hailey from a few weeks ago. This is mostly for our families who have not seen Hailey walking yet. Marc took this in the hall in our apartment which is why there is an echo. :) The Kubaczs (the family we are going to Africa with in January) live next door to us so we have lots of fun watching the kids run up and down the hall. The only other occupant on our floor is a Catholic nun who works with the hospital. Sister Sherri is so sweet and a great sport about the kids playing in the hall!

Our Ordinary (but good!) Weekend

We didn't have any major agenda this weekend and yet somehow it flew by. I think because Marc was on call Friday and then again today, it made my weekend seem a little shorter. :) Marc has been on trauma surgery this month which has made me very thankful he is not a surgeon full-time. They have very busy schedules and are on call quite frequently. I think Marc feels like he is learning some about how to run a trauma which should help him be more equipped for when he sees traumas in Africa.

We did manage to enjoy our Saturday by just relaxing. It was a pretty gloomy day so it took us a little while longer to shed the PJ attire. The kids love standing on the back of the couch and looking through the window in our apartment. Saturday is a busy day on the train tracks so they watched the trains for a bit before we decided to get dressed and head out to the mall.
I tried to take some picture of Hailey today since she turned 11 months last week. After seeing this first picture I was reassured that she is probably doing just fine on the growth charts. :)
Then, tonight we pulled out the wagon to go take a walk. Right as we were about to get on the elevator to go outside, Marc got a page for a trauma so he had to leave us (we now live right next to the hospital so he takes call from home which is GREAT). The kids were so excited about our walk so I still took them out by myself. Pulling 50 pounds around in an awkward wagon is no easy task but we managed to have a good time and I hit every bump possible which thrilled Eli to no end.
As I glance back up at the pictures in this post I am so thankful for these two kids we have. We told our families when Eli was 9 months old that we were ready to have another one and I think both sets of parents thought we were a little crazy (and naive, ha!). It has certainly been busy over the past year, but if I could go back and do it over again, I absolutely wouldn't change a thing. Hailey's birthday is just around the corner and we can't wait to celebrate all the goodness she brings to our lives!

Something Smells Yummy

When I saw that a cold front was coming through this week I knew it was time to cook a big ol' pot of soup (even though it is only dropping to the seventies). :) I have no idea why we associate certain foods with certain seasons, but soup is definitely a fall and winter meal in our house. I am starting to explore some Africa friendly recipes as we get closer and closer to our upcoming trip. I borrowed a cook book from the fellowship director's wife recently that she cooked out of when they lived in Rwanda and Kenya. There was a recipe for a Minestrone soup that she marked as a family favorite so I combined it with a recipe that I found on allrecipes. com and it came together quite well. There are lots of ingredients in this soup, but it is really easy to put together. The recipe tells you to cook it on the stove, but I sauteed the garlic, onion, and carrots for a bit and then through it all in a crock pot and cooked it for 6 hours. The carrots still had a little crunch so it probably would have been better closer to 8 hrs. You can adjust the veggies to your liking or what you have available (hence the reason this should be Africa friendly). I also completely forgot to add the pasta to it (which made it far less Italian) but it still tasted great.
Minestrone Soup
3 Tbs. olive oil
3 cloves garlic, chopped
1 onion, chopped
5 carrots, sliced
6 cups of low sodium chicken broth
2 cups of tomato sauce
1/2 cup of red wine (optional)
1 can of green beans, drained
1 can of kidney beans, drained
1 can of cannellini beans, drained
1 can of diced tomatoes, drained
2 zucchini, quartered and sliced
1 1/2 tsp. dried oregano
2 Tbs. chopped fresh basil
salt and pepper to taste
1 cup of ditalini pasta or seashell pasta
Parmesan cheese, grated on top

(I confess that I omitted the celery because I just don't like it but feel free to throw some back in!)

In a large sauce pan, over medium-low heat, heat olive oil and saute the garlic for 2-3 minutes. Add onion and saute for 3 minutes. Add carrots and saute for another 5 minutes.

Add chicken broth, water, and tomato sauce and bring to a boil stirring frequently. Add the red wine at this point if you want. Reduce heat to low and add cans of beans, tomatoes, zucchini, oregano, basil, and salt and pepper. Simmer for an hour.

Boil the pasta, drain, and set aside. Place a few Tbs. of pasta into each serving bowl and ladle the soup over the top. Grate fresh Parmesan cheese on the top and serve with some warm crusty bread.

So... not to overload you on a REALLY long recipe post but here's another one. As I was cutting carrots yesterday I thought back to my last carrot adventure a few weeks ago (we usually just eat baby carrots so peeling and slicing carrots is a rare occasion for me!). How yummy does this look???
Dean planned a fun dinner/get-together for Dianna's 30th birthday a few weeks ago, and I volunteered to make a cake. He requested a carrot or spice cake for her which I had never made (even though it is Marc's favorite cake, too) However, thanks to my trusty favorite recipe site, I think I pulled it off. Marc couldn't believe that I had never made a cake like that for him in all of his birthdays we have celebrated together. So, this is also probably something I will be making again from scratch in Africa for Marc's birthday in February. :)

Carrot Cake
2 cups white sugar
2 cups all purpose flour
1 tsp. salt
2 tsp. ground cinnamon
1 tsp. nutmeg
1 tsp. baking soda
1 tsp. baking powder
1 cup vegetable oil
1/2 cup apple sauce (the original recipe called for 1 1/2 cups of oil which seemed like a lot, so this is a substitution for the 1/2 cup I omitted)
4 eggs
3 cups grated carrots
1 cup chopped walnuts

Preheat oven to 350. Grease two 9 inch round cake pans.

Combine the sugar, flour, salt, cinnamon, soda, oil. With an electric mixer beat in the eggs one at a time. Stir in the carrots and the walnuts. Pour the batter into the prepared baking pans.

Bake at 350 degrees for 30 minutes. Let cool. Place your first cake on your serving dish and frost the top of it evenly. Sprinkle walnuts on top and then add your second layer. Frost the rest of the cake all over and then add the remaining walnuts on the top. Keep refrigerated until ready to serve.

Cream Cheese Frosting
1 package cream cheese, softened (use the real stuff, the low fat stuff is too runny)
1/4 cup butter
1 1/2 cups powdered sugar
1 tsp. vanilla

Cream together the cream cheese and butter in a mixing bowl. Mix in the vanilla. Gradually add in the powdered sugar. Store in the refrigerator. I think this is half the original recipe but worked well for my cake.

*The one tip I have is for preparing your carrots. I tried three different ways to grate them because I wasn't sure how small the pieces needed to be to cook well but still show up in the slices when cut. My favorite shred was with using a hand grater (not the micrograte kind) on the small grating side, but it was taking forever. Then, I pulled out my food processor. It grated them pretty small but was SO much easier and certainly the way I will do it next time. Also, a whole bag of carrots was pretty close to 3 cups.

Well, I at least feel caught up on a recipe post. Blogging has become more difficult since I have been back at work over the past six weeks, and if I have to chose to do a post about the kids or share some new recipes, the kids usually win out! :) I have some video of Hailey WALKING that I hope to get posted some time this week. She is 11 months old today!

Evan turns 4

We were so glad to be in town last weekend for Evan's birthday. Evan is our nephew (Marc's sister's little boy) and we don't get to see him or his sister enough because of the miles between us. The weather was beautiful and we enjoyed celebrating in Dan and Angie's back yard! Evan loves Cars so that was the theme of the party.

Labor Day Weekend

I think "flexible" has become the new word to define our family. I am in awe of how well our little ones have handled our travels lately. We headed to Illinois this past weekend to spend some much needed time with Marc's family. Our time always seems so short (because it takes us a full day to get there!), but we had a great time.

We left on Thursday after I got off work and drove through the night. We arrived around 3:30 am and headed to bed. We had decided that Marc's parents could take over for us when the kids woke up so we could sleep in a little longer. Around 8 am, Eli and Hailey were both awake and Marc's parents decided to take them to breakfast. Marc and I had just laid back down when he heard some commotion outside in the driveway. We came outside to find that the kids were locked in the car. Noreen was REALLY upset about it all, but it wasn't hot outside and the kids were calm so we just played peek-a-boo through the windows until the police arrived. It was an eventful way to start the day after only 4 hours of sleep! Ha!
The kids still got to go enjoy their breakfast at McDonald's and Marc and I got a tiny bit more sleep. :)

That afternoon, Marc and his dad created a water park out on the deck. Eli and Hailey had so much fun playing in the water. Marc's parents have a beautiful lake behind their house and we always love spending some time on their deck.
The next day we went to the Children's Museum and had SO much fun. Eli would have stayed all day... umm if he hadn't peed in his pants and if Hailey wasn't having a total melt-down because it was nap time. But I guess that is life for an almost potty trained 2 year old and a very cranky without a nap 10 month old. I managed to sneak in some fun pictures throughout the morning.

I hope to sort through Evan's birthday party pictures tomorrow to finish off our weekend away. However, right now my pillow is calling my name. :) Good night!
